Poee Sandwich Shop

11 AM and 1:30 PM

26th April, 2025

Conservatory

About the event

Bread can be a memory. And in Goa, that memory often smells like smoke, tangy

ferment, and the quiet crunch of poee.

What’s Poee?

Think of it as Goa’s answer to the pita, except it’s more soulful, more storied, and

infinitely more versatile. A whole wheat bread made with a natural starter, poee is

leavened slowly and baked fast in clay ovens, resulting in that signature puff, a chewy

crumb, and a slightly smoky skin. It’s humble, yes, but deeply expressive.

So why a Poee Shop?

Because this one bread deserves a spotlight. Chef Rhea has taken something

traditional and built an entire menu around it — not to modernise it, but to show just how

flexible and fun it can be.

About the Chef

Meet Chef Rhea Aaron, the force behind Klaa Kitchen and a quiet revolutionary in the

world of Goan food. Her food is more than regional; it’s personal — a tribute to her

heritage, her family, and the deeply familiar taste of bread that tells a story.

She’s cooked at The Conservatory before, and every single time, the response has

been the same: wholesome plates, wiped clean.

So when we thought of doing a Goan Poee Shop, we didn’t think twice. This is bread —

and a chef — born of memory, place, and care.
