Chef Auroni Mookerjee’s culinary journey is anything but linear. Though commonly known as a
“Bengali Chef” for championing Bengal’s regional and rural cuisines through Sienna, his roots
stretch far beyond Calcutta. Raised in Delhi, with a career that started in advertising in Bombay,
and a foundation in European fine dining, his perspective on food is shaped by multiple
influences. The “Beyond Bangala” residency is a tribute to that journey, where tradition meets
evolution, and Bengal’s flavors are reimagined through a broader lens.
About Chef Auroni Mookerjee
A storyteller through food, Auroni’s expertise spans from crafting rustic Bengali dishes to plating
up European fine dining. After training under some of India’s top chefs, he led The Salt House in
Calcutta and later became the Executive Chef at Chef Ritu Dalmia’s Diva Group. His passion
lies in exploring how migration, history, and technique shape a cuisine—making his work a
constant dialogue between heritage and innovation.
